Does Alfresco Document Management support all file types?

Yes, you can upload any files to Alfresco.

If you upload a file named "muhammad.ali" using a strange file format, Alfresco will accept it without any problem, and you can play with its metadata, etc., like any other file. You probably won't be able to search for its contents.
