Could you please let me know how can I change the font size of the button in the title of the interface (iPhone app) / or any API?

You need to display the Fonts window by choosing Font → Show Fonts (or by pressing Command-T).
Then you select (highlight) the button in IB and change the font size in the newly opened font panel.
